Ingredients:
115g unsalted butter (softened at room temperature)
160g caster sugar
200g plain flour
1 1/2tsp baking powder
1 1/2tsp vanilla essence
1/2 cup milk
2 eggs
a pinch of salt
food colouring
Steps:
1) Cream butter and sugar in mixer,
2) Add egg one at a time into the mixer.
3) Sift flour, baking powder and mix with salt.
4) Pour half of the flour into and half of the milk into the mixer and mix till well-combined.
5) Then pour the remaining flour and milk and mix in the mixer.
6) Divide into four portions onto 4 containers and add different colouring.
7) Put in muffin cups.
8) Bake at 170 degrees celsius for about 20mins or till ready.

Red Velvet Cupcakes
I made my mum's favourite red velvet cupcakes. Here's the video:
Ingredients for Red Velvet Cupcake:
115g unsalted butter (softened)
200g plain flour / all purpose flour
1 1/2 teaspoonfuls baking powder
2 tablespoonfuls cocoa powder
a pinch of salt
1/2 cup buttermilk (no buttermilk??!! watch the video to learn how to make substitute buttermilk)

Some red food colouring
Ingredients for Cream Cheese Frosting:
125g unsalted butter (softened)
1 packet cream cheese (250g)
1 cup icing sugar / powdered sugar ( you can make it 2 cups if you want the frosting to be stiff)
1 teaspoonful vanilla essence

Nutella Brownies
Here's my video on Nutella Brownies:
Ingredients:
1 cup Nutella
2 eggs
4 tablespoons of plain flour
Steps:
1) Mix the Nutella and eggs.
2) Add the flour and mix again.
3) Pour the mixture onto a greased baking tray.
4) Bake at 180 degrees celsius for about 20mins (or till it is ready).

Easy No-Bake Lemon Cheesecake
Today I made Lemon Cheesecake. It is so easy to make because you do not need to bake it. I am not a fan of cheesecakes but both my mum and dad love them. So today, I made it just for my mum and dad.
Here is the video:
To make the crust
Ingredients:
200g plain biscuits/ cookies (digestives/marie)
250g unsalted butter (melted)
Steps:
1. Crush the biscuits.
2. Mix the cooled melted butter with the crushed biscuits.
3. Pour onto a container.
4. Press the mixture down with a cup.
5. Leave it in the fridge for about 30mins for the crust to set.
To make the cheesecake
Ingredients:
750g softened cream cheese
2 x 390g of sweetened condensed milk
1/2 cup of lemon juice
Steps:
1. Mix the softened cream cheese with the condensed milk using a mixer.
2. Mix at medium speed first then high speed.
3. Put in the lemon juice and mix again.
4. Pour the mixture onto the crust.
5. Put the cheesecake in the fridge for 3 to 4 hours.
And that's it. Easy, isn't it.
